I hint at our work lives on this blog from time to time, so long-time readers may recall that for years Ryan and I worked for the same company (and carpooled to work!). He changed jobs a few months ago and while I really miss being chauffeured to and from work each day, this job is a much better fit for him and it's exciting to see him doing something he loves so much. We're no longer coming and going at the same time and there are times that he has a later meeting and doesn't make it home for that crucial "mom's trying to get dinner on the table and Brecken needs to be occupied" period. As long as Brecken isn't hungry or tired this is no big deal, she's more than happy to sit at my feet and play (she prefers tupperware and spice bottles over actual toys, go figure). There are days, however, when she just wants to be held and because I'm a sucker for baby cuddles, especially after a long day at work, I'm more than happy to acquiesce.

Because I only have two arms, baby cuddling and making dinner is an impossible feat, which is why I'm forever grateful for my Ergo. For the record, this isn't a sponsored post or anything, I just really love my ergo. Depending on her mood (and how she napped that day!), Brecken either loves to burrow in and have some cozy quiet time or she's interested in every move I make, arms flailing trying to "help" me stir or saute or plate. Either way I'm happy for the time together, but I prefer simple meals without a ton of work because even with Brecken tucked away in the Ergo, cooking is automatically more complicated. This scrambled grains meal was on the menu on one such night and making it while wearing her was doable (meaning if you're doing this sans child, it's even easier!). This dish is very similar to one of my all-time favorites, Quinoa Fried Rice. I used mushrooms (pre-sliced, a lifesaver) and kale, but much like the Quinoa Fried Rice, you can use whatever vegetables you have on hand. You can also swap any grains for the quinoa. This is a great weeknight meal options--it's fast and healthy, and got the Brecken (and Ryan and Natalie!) stamp of approval!

I'm one of those people who has no problem eating the same food over and over again. So long as it's something I like, I'm totally down with leftovers...two, three, even four days in a row! I get that not everyone is that way, however, but I'm going to offer you the best of both worlds today. I'm obsessed with this roasted vegetable puree. It's easy to make (especially if you have a food processor), makes a huge batch, and is healthy to boot! I was first introduced to it earlier this year when we visited our besties Katie and Matt in New York. Katie went above and beyond her hostess duties and prepared an array of foods for us throughout our visit, this spread being my favorite. We mostly used it on sandwiches (highly recommend it with melty cheddar and avocado!), but by the time we were headed home I was dreaming up all sorts of ways to use it.

The spread has proven as versatile as I had hoped. It's excellent inside an omelet, divine as a pizza crust, and as you see here, the perfect topping for crostini. Appetizers don't get much easier than this. Slice & toast bread, top bread with the roasted veggie spread & cheese, and bake til warm and melted. I stuck with Castello's Aged Havarti, which is quickly becoming one of my favorite cheese. Much like the roasted vegetable spread its paired with here, havarti is totally multifunctional. I've broken away from always using mozzarella on pizza and find the buttery havarti adds a unique flavor element. I love what the cheese does when pressed inside two pieces of bread in my panini press. Of course it goes without saying that I don't mind it sliced and eaten with crackers, salami, and wine!

Even if I don't mind eating the same foods time and time again, you don't have to! Whip up some vegetable spread, pick up some havarti, and let creativity fly free!

Crostini with Roasted Vegetable Spread and Havarti
Ingredients:
-1 medium eggplant
-2 red bell peppers, seeded
-1 red onion, peeled
-2 garlic cloves, minced
-3 tbsp olive oil
-1 1/2 tsp kosher salt
-1/2 tsp freshly ground black pepper
-1 tbsp tomato paste
-1 baguette, thinly sliced
-4 oz shredded Havarti

Directions:
1. To make the roasted vegetable spread, preheat oven to 400F. Cut the eggplant, bell peppers, and onion into 1-inch pieces. Toss with olive oil, garlic, salt, and pepper. Spread on a foil-lined baking sheet and roast for 45 minutes, until vegetables are lightly browned and soft (toss once during cooking).
2. Allow vegetables to cool slightly before pulsing in a food processor with tomato paste, pulsing to blend to desired level of smoothness. Season with salt and pepper, as needed. *Roasted vegetable spread can be made several days ahead of time. Store in an airtight container in the fridge.
3. To make the crostini, line a baking sheet with foil. Place sliced bread on prepared baking sheet and bake at 400F for 10-12 minutes, until golden and toasted. Remove from oven and top each with roasted vegetable spread. Sprinkle with cheese and return to oven for 3-5 minutes, until cheese is melted. Serve immediately or at room temperature.

My favorite way to vacation is by renting a house vs. staying in a hotel. We've done that for a lot of our travels over the past few years, renting places in D.C., Arizona, and Charleston, to name a few, and now that we have Brecken, renting a house is absolutely the better option. We like being able to put Brecken in a separate room and not worrying about disturbing her if we stay up later. We also like more SPACE because goodness knows between all the stuff babies need and my terrible propensity to overpack. Most of all, we like having amenities like a washer and dryer and a kitchen! Much as I love exploring new restaurants on vacation, it's nice to be able to prepare some meals or stay in for easy breakfasts or lunches. On our most recent trip to Orlando for my cousin's wedding, my entire family rented a beautiful house with laundry facilities, bedrooms for all (no easy feat now that there are 8 of us plus 2 babies!), and a POOL. It also had a kitchen that we took advantage of, but on our last evening there we were tired from rocking the dance floor at the wedding and splashing around with the babies in the pool, and we opted to order in pizza.

I've heard of Mellow Mushroom, but this was my first introduction to the pizza chain and we were impressed by the inventive topping combinations and the right balance of toppings to crust / sauce / cheese (in my book more toppings is always better!). Of the three we tried, the Magical Mystery Tour was my favorite. The best part of that pizza was the heat from the jalapenos and I knew the next pizza I made at home would include the spicy pepper! My version is slightly different, I swapped havarti for the feta and mozzarella, simply because that was what I had on hand (although my sister and I decided this was even better than the original!) and completely forgot about the spinach (I'll add next time!), but even without the green veggie I'm willing to bet my version was decidedly healthier and undoubtedly tastier! This homemade pizza is about as easy as it gets, if you buy premade pesto and use presliced mushrooms, making it perfect for a weeknight dinner. And you can't beat eating pizza in the middle of the week that tastes like vacation!

If there was an awards ceremony for the season, Fall 2014 in St. Louis would undoubtedly win. We have had the best fall weather...brisk mornings but warm afternoons, and colors that rival what you would find on the east coast. I'm usually not as gung-ho about fall as most people in the area are, mostly because it precedes the season that shall not be named, but this year I've been completely smitten.

While you won't find me running through the Starbucks drive-thru for a pumpkin spice latte each week, I will celebrate in my kitchen, beginning with this fall-inspired ravioli recipe. As you know, I'm all about quick and easy recipes lately and this five ingredient recipe fits in the bill. We've been eating a lot of Noosa Yoghurt lately, so when I randomly got an email from them asking me to create a recipe with one of their yogurts, I didn't have to think twice before saying yes. My personal favorites include the coconut and tart cherry flavors, but in celebration of fall you can find pumpkin at Target and it is to die for! Even if they hadn't reached out to me, I likely would've been talking up this flavor in one of my Odds & Ends post because it might be my favorite flavor of yogurt ever!

Because their pumpkin yogurt isn't too sweet, I knew it would work well in a savory recipe and after being wowed by some pumpkin ravioli at a restaurant recently, I was determined to give it a try. My goal was to keep things simple and let the flavor of the yogurt shine through. All I did was add a little nutmeg and some pasta cooking water to create a sauce that coated the cooked pasta. Topped with fresh thyme and toasted pecans, this dinner had all three of us (yes, even 9-month old Brecken!) singing its praises! If you're looking to celebrate this glorious fall we've had, this is the way to do it!

My youngest sister Renatta and her friends are living off-campus for the first time this semester. While they technically had a kitchen and a minimal meal plan last fall, any cooking skills they'd acquired were quickly forgotten during their semester in Spain where they were basically waited on hand and foot by their host mom.

They're slowly but surely getting used to the kitchen once again, but they leap at any opportunity to eat a meal that they don't have to cook. When my sister heard that pork carnitas were on the menu one night, she wasted no time dropping hints about herself and her two friends joining us. My college days are becoming more of a distant memory, but I still remember what a treat a home-cooked meal was and I love having the girls over. How else do I learn which songs are popular right now? (I wish I were kidding...!)

I made this Mexican Kale Salad to serve alongside the tacos, and it won us all over. The jalapeño-lime dressing is just enough to soften the tough kale (you can even dress the kale up to a day ahead of time), and the black beans, corn, peppers, and cheese give it enough heft that it could pass as a main dish if you chose! By the end of the meal, the girls were asking me to recite the recipe and had determined this was simple enough for them to handle...although I'm sure they'd be just as happy to invite themselves over next time it's on the menu!

When I menu plan for the week ahead, I always try to incorporate a fair amount of variety into dinner each night. Don’t get me wrong, I’m a huge proponent of leftovers and they appear on our table at least once or twice a week. However, on the nights I’m cooking, I try to mix up the cuisine / genre, protein source, and even the texture or temperature of a dish (unless it’s January and then I’m okay eating soup every night for a week!).

Usually at least once a week I plan for a lighter entrée, typically in the form of a giant salad. We have a few of our favorites that we return to again and again (like this grilled vegetable salad, this sweet potato, kale, apple salad, and this shredded vegetable detox salad), but I’m always on the lookout for new ones to add to the list. This kale waldorf salad, from Whole Foods, is unique in that it relies on pureed walnuts and apple in the dressing instead of oil. I was skeptical, but didn’t miss the oil one bit, especially since you’re still getting healthy fats from the nuts. I did add a bit of water to thin the dressing to my liking, but I liked how the dressing clung to the kale leaves, softening the salad and helping to bulk up your usual kale salad. Because kale is so hardy, this is a great make-ahead salad…the leftovers I took for my lunch the next day weren’t soggy or unappetizing in the slightest! Next time you’re looking for a salad to round out your meal plan (just add some crusty bread to finish it off), give this one a try.

With a freezer full of main dishes, thanks to the marathon freezer cooking day I had with friends, I’m taking the time to get a little creative with our side dishes rather than just roasting some vegetables or steaming some broccoli. To be fair, Ryan made this bell pepper salad one evening to eat alongside some shredded Italian beef we pulled from the freezer. We returned home from work one evening to a happy baby who suddenly transformed into a lethargic, feverish baby with temperatures reaching 103F.

We’d witnessed a few minor fevers with Brecken before, but nothing that high and I was too busy cuddling her and trying to keep her comfortable to even think about this salad I’d planned to make. Thankfully super dad/husband stepped in and started throwing this together. For as pretty as it looks arranged on the plate, you’d never guess how simple it is. Slice some peppers, chop some herbs, toss in the dressing, and after a little rest it’s ready for the table. Leftovers kept well, so I’d guess you could make this up to a day ahead of time to make getting dinner ready even easier!

I’m sure many of you, like me, have a handful of grocery staples. You buy whatever you need for your meal plan or maybe grab a few impulse purchases each week, but more often than not you have your basics that are always in your cart. For us this includes Greek yogurt, kale, bananas, and zucchini. Okay, and chocolate chips.

I like always having zucchini on hand because it’s easy to slice and eat with hummus, we absolutely love zucchini bread (with chocolate chips of course), and it’s a versatile vegetable that can be added to just about any meal. Take this pasta, for instance. Pasta often gets a bad reputation, especially in today’s age of “fear the carb” and “avoid gluten like the plague”, but this dish is fairly healthy and not oozing with cream or cheese. It only takes a few basic ingredients that you likely have on hand (especially if zucchini is one of your staples!) and you aren’t going to have to slave away in the kitchen for hours to get dinner on the table!

It's inevitable. Every time I make enchiladas, I end up with a few spare tortillas, taking up space in my cheese drawer. Sometimes I get my act together and turn them into cinnamon sugar chips to eat with fruit salsa, but more often than not they sit untouched and forgotten, until I make enchiladas, buying another pack of tortillas, and guiltily tossing the old ones. Forgotten tortillas, no more! Instead turn that handful of spares into breakfast quesadillas. We eat them for brunch or dinner, with whatever other spare ingredients we can scrounge up. The premise is simple: make a batch of scrambled eggs, with as many or as little mix-ins as you'd like, then sandwich the eggs between two tortillas with a hefty sprinkle of cheese and you have yourself breakfast quesadillas!

The combination I've made most recently, and what you'll find here today, has a bit of a Mexican flair, with bell peppers and spinach, spiced with cumin and chile powder. We prefer them with sour cream and an avocado tomato salsa, but you're free to make these your own. We've thrown in black beans, bacon, even leftover brats! The key is to add cheese on both sides of the quesadilla (under and on top of the egg mixture) to give it some sticking power when you cut into triangles! We might call them breakfast quesadillas, but they're a favorite for lunch or dinner in our house too. Don't ever let those spare tortillas get lost in the fridge again.

I don’t know about you, but I’m always more than ready to kiss heavy soups and stews goodbye after a long winter! When it comes to summer foods, however, I’m never quite as eager to send them on their way.

Although it’s almost time to start welcoming apples and pumpkins, cinnamon and sage into our kitchens, I’m still holding on to my summer favorites for a little while longer. This corn and zucchini salad is going to grace our table a few more times in the next few weeks. Even if you can no longer get fresh corn at its peak, pick up a bag of frozen corn and give this a try! The mix of flavors and textures makes for a unique contrast, but collectively it screams summer. Let’s hold onto those seasonal favorites just a little bit longer!

I am really getting on board this whole freezer meal thing. While it's a particularly lifesaver for me as a working mom, I can't imagine there's a single person who wouldn't be excited to skip a night of cooking without having to resort to takeout or fast food, simply because you have a meal or two in the freezer. This salsa verde quinoa bake actually wasn't intended to be a freezer meal; I made it one weekend and had it in the fridge, ready to bake, when plans changed and we didn't end up baking it or eating it. Rather than shift the remainder of my menu plan for the week, I decided to see how it froze.

A few weeks later, I transferred this from the freezer to the fridge on what I knew would be a busy weeknight. The only work I had to do that afternoon, aside from putting it in the oven, was to top it with crushed tortilla chips and cheese. Any step I can manage with a baby on my hip is totally doable!

My inspiration for this dish was actually a completely different recipe which, after a few major changes, resulted in this fabulous casserole. On a whim I picked up three jars of salsa verde and I can already tell you that the other two will be used to make this dish twice more! You could easily swap a different kind of bean (or even chicken!), switch out the vegetables, or add shredded pepperjack on top for more of a kick. This is so easy to make and doesn't require a ton of dishes; double your batch and make one for tonight and one for the freezer!

My current kitchen is bigger than the kitchen in our duplex, where we lived when we were first married. That duplex kitchen was bigger than the kitchen in my college house, where I first started cooking (very, very minimally!). Although I’ve managed to increase kitchen size over the years, it’s definitely not enough close to big enough. The drawers and cabinets are jam packed and you’d probably laugh at the size of my pantry. I’m not complaining—kitchen woes aside, I love our house and don’t have any desire to move anytime soon. Rather than lust after larger kitchens, I try to be intentional about wisely using the space I do have.

Of course, this means I don’t have room for unnecessary kitchen gadgets. That being said, after making this salad, I think I can justify the purchase of a cherry pitter! Removing each pit with a knife is a painstaking process, though I’ll admit it was worth it for the final product. I’ve used just about every kind of fruit in salad (mango, strawberries, blueberries, nectarines, pears, apples, oranges, peaches, grapes, pomegranate, etc.!) , but never cherries. It was my first, but definitely not my last…especially once I get my hands on that cherry pitter! We enjoyed this as a lighter dinner, the chickpeas adding a little protein and heft (grilled chicken would also serve the same purpose). In my opinion, the best salads are ones with something different in every bite, and you definitely get that here with pistachios, goat cheese, chickpeas, green onions, and cherries! Even if you don’t have a cherry pitter (or room for one!), take the extra fifteen minutes to pit some cherries and make this…I suspect you’ll find the labor of love worth it!

This isn’t an earth shattering recipe. It can hardly be called a recipe. However, after seeing the Chicken and Vegetable Pressed Sandwiches with Goat Cheese get pinned over and over (and over) again on Pinterest, it seems people are a fan of easy (make-ahead) sandwiches. These caprese sandwiches fit the bill on both accounts, and actually taste better if they’re given a chance to sit in the fridge awhile.

Rather than use a plain, basic pesto, I added a dash of balsamic to jazz up the flavor a bit and I suggest you do the same! Shredded mozzarella would work here, but slicing the fresh stuff is really the way to go. Wrap your sandwiches tightly in plastic wrap, store for a few hours (or overnight) in the fridge, and you have yourself a café-worthy sandwich to eat in the office for lunch, over a casual dinner, or, like we did, at a picnic in the park (hence the pictures among the grass)!
