Chocolate Fudge Drops

The original name for this recipe was Melt in Your Mouth Buttermilk cookies, seen on Baking Bites. However, while those turned out thin, mine were little pudgy drops that tasted like bites of fudge brownies. While I was surprised that they didn't come out looking as I expected, I wasn't the least bit disappointed after biting into one. Who's going to complain about anything that tastes like chocolate fudge?! Not me...and not anyone I shared them with! The cocoa flavor is very prominent in these, especially because I slightly reduced the sugar from the original recipe.

I suggest buying some buttermilk, whipping up these pancakes and then using what's left in these cookies!

 Chocolate Fudge Drops
adapted from Baking Bites
*makes 4 dozen cookies

Ingredients:
-2 cups all-purpose flour
-1/2 tsp baking soda
-1/2 tsp salt
-1/2 cup (1 stick) butter
-3/4 cup cocoa powder
-1 1/2 cups sugar
-1 tsp vanilla extract
-2/3 cup buttermilk
-1 1/2 cups chocolate chips

Directions:
1. Preheat oven to 350F and line baking sheets with parchment paper.
2. In a small bowl, mix flour, baking soda, and salt.
3. In a microwave-safe bowl, melt the butter. Add cocoa powder to melted butter, whisking until smooth. Mix in sugar, vanilla extract, and buttermilk. Gradually add the flour and stir until combined. Stir in chocolate chips.
4. Drop tablespoonfuls of dough onto the prepared baking pan. Bake for 9-10 minutes. Allow to cool for 2-3 minutes before transferring to a wire rack to cool completely.
