Caramelized Onion, Blue Cheese, and Bacon Pizza with Fig Jam

We're a little bit obsessed with this pizza. And really, can you blame us? The sweet fig jam, the pungent blue cheese, and the smoky bacon play off of one another perfectly. The caramelized onions are the cherry on top! This is a combination we frequently use on pizza, but I finally got around to blogging it. On my birthday a few weeks ago, this was actually my meal of choice.

One word for the wise--do not try to use wax paper as a substitute for parchment paper. I ran out of parchment paper while making pizzas and since I knew my dough has a tendency to stick to the pans, I quickly grabbed the wax paper. WELL, the dough will also stick to wax paper. If you aren't a fan of waxy pizza dough, don't make my silly mistake (note--it was our other pizza that suffered this demise...the fig pizza thankfully went unscathed!). There aren't major measurements below. I've found pizza is best made "to taste", so use as much or as little of the ingredients as you'd like!

Caramelized Onion, Blue Cheese, and Bacon Pizza with Fig Jam

Ingredients:
-1 (12 oz) ball of pizza dough
-1/3 cup fig jam
-blue cheese
-1 large onion, sliced
-2 tbsp butter
-cooked & crumbled bacon

Directions:
1. Melt butter in a medium-sized saucepan over medium heat. Add onions and cook onions on medium low, stirring occasionally, until browned and caramelized (20-30 minutes).
2.Preheat oven to 400F. On a baking sheet lined with parchment paper and sprinkled with cornmeal, roll out pizza dough. Bake pizza for 15 minutes, until crust is slightly browned on the bottom.
3. Remove from oven and spread with fig jam. Top with caramelized onions, blue cheese, and bacon. Return to oven and bake for an additional 10-15 minutes.
4. Cut into pieces and serve immediately.
