Veggie Bagel Sandwich


Remember those bagels I made? While they were great fresh out of the oven, I was most excited to make a veggie bagel sandwich. This is one of my favorite things to grab for lunch or dinner. It started in college when I had class all day on Tuesdays and Thursdays with no time for lunch, so I'd buy them from the "C-Store" and chow down. This obsession eventually wore off but once Ryan and I discovered the Everything Bagels at Trader Joe's, we made these on many summer evenings when it was too hot to cook. These were just as great as my Trader Joe's creation, if not better since the bagels had that touch of homemade goodness :)

My favorite bagel sandwich combination is as follows:

Ingredients-
1 bagel, any flavor (Everything bagels provide the best flavor in my opinion)
Cream Cheese
Spinach
Tomato slices
Cucumber Slices

Directions-
1. Cut bagel in half and toast in a toaster or toaster oven
2. Spread cream cheese on both sides of the bagel
3. Add spinach, tomato, and cucumber
4. Put the two sides together and EAT!

**I have also put banana peppers on these (LOVE that, but totally forgot about that tonight) and sliced bell pepper
