Chocolate Chip Coconut Pumpkin Bars


I had no real reason to bake these, other than the fact that I want to make as many pumpkin-flavored things as I can this fall and we were out of baked goods in the house! These are actually relatively healthy, with whole wheat flour and no butter, and incredibly moist, thanks to the applesauce and pumpkin, so I practically considered them a health food ;) They didn't last long...but in our defense, we gave some to Ryan's parents! I think if I made these again, I'd mix the coconut into the batter instead of sprinkling on top. Other than that, I thought they were a great treat!

Recipe from Megan's Munchies, which has tons of great dessert recipes!

Ingredients:
-2/3 cup sugar
-1/2 cup unsweetened applesauce (mine was sweetened, so I used slightly less sugar)
-1 egg
-1 can pumpkin
-1 cup whole wheat flour
-3/4 cup oats
-2 tsp baking powder
-1/2 tsp baking soda
-1 1/2 tsp pumpkin pie spice
-1/2 cup mini chocolate chips
-1/4-1/2 cup shredded coconut

Directions:
1. Mix sugar, applesauce, pumpkin, and egg in a large bowl until well blended.
2. Add in flour, oats, baking powder, baking soda, and pumpkin pie spice. Mix until well combined.
3. Stir in chocolate chips.
4. Spread into a 9 x 13 pan. Sprinkle with coconut.
5. Bake for 25-35 min at 350. (Mine were good after 25 minutes)
