My favorite way to vacation is by renting a house vs. staying in a hotel. We've done that for a lot of our travels over the past few years, renting places in D.C., Arizona, and Charleston, to name a few, and now that we have Brecken, renting a house is absolutely the better option. We like being able to put Brecken in a separate room and not worrying about disturbing her if we stay up later. We also like more SPACE because goodness knows between all the stuff babies need and my terrible propensity to overpack. Most of all, we like having amenities like a washer and dryer and a kitchen! Much as I love exploring new restaurants on vacation, it's nice to be able to prepare some meals or stay in for easy breakfasts or lunches. On our most recent trip to Orlando for my cousin's wedding, my entire family rented a beautiful house with laundry facilities, bedrooms for all (no easy feat now that there are 8 of us plus 2 babies!), and a POOL. It also had a kitchen that we took advantage of, but on our last evening there we were tired from rocking the dance floor at the wedding and splashing around with the babies in the pool, and we opted to order in pizza.

I've heard of Mellow Mushroom, but this was my first introduction to the pizza chain and we were impressed by the inventive topping combinations and the right balance of toppings to crust / sauce / cheese (in my book more toppings is always better!). Of the three we tried, the Magical Mystery Tour was my favorite. The best part of that pizza was the heat from the jalapenos and I knew the next pizza I made at home would include the spicy pepper! My version is slightly different, I swapped havarti for the feta and mozzarella, simply because that was what I had on hand (although my sister and I decided this was even better than the original!) and completely forgot about the spinach (I'll add next time!), but even without the green veggie I'm willing to bet my version was decidedly healthier and undoubtedly tastier! This homemade pizza is about as easy as it gets, if you buy premade pesto and use presliced mushrooms, making it perfect for a weeknight dinner. And you can't beat eating pizza in the middle of the week that tastes like vacation!

It's been way too long since I've posted a new pizza or flatbread recipe on The Sweets Life. In fact, a quick dig through the archives showed that it's been almost a year...the last flatbread posted was this Bacon Apple Butter Flatbread with Caramelized Onions and Gouda. Pizza's on the menu at least once a month around here, but it's usually a "whatever's in the fridge and can be put on a pizza" type meal, which isn't usually blog-worthy.

This flatbread, on the other hand, is definitely blog-worthy! Inspiration came from Martha Stewart, but I opted to use sweet potato instead of a Yukon gold. The best part of this flatbread was how crispy the crust was. Usually when I make pizza at home, I pre-bake the crust, but only at a temperature of 400F. Little did I know, the secret for the best, crispiest crust lie in a 500F oven!! From here out on I'll bake my pizza at a much hotter temperature!

The toppings were simple, but satisfying...and not to mention pretty! Skip the red pepper flakes if you have picky palates, but I liked the tiny bit of heat it added to the freshness that the asparagus and sweet potato contribute. Be sure and give this a try while asparagus is in its prime!

14 Meatless Pizza Pies!

Can we talk pizza today? I know I typically only have one weekend post (Odds & Ends!), but when I heard my advertising network (Foodie by Glam) was featuring pies for the month of March (in honor of Pi Day on 3/14 of course), I couldn't resist joining in on the fun.

I love my S'mores Ice Cream Pie and the infamous Reese's Fudge Pie, but today I want to talk another kind of pies: pizza pies! My sister and I recently had a conversation about our love for pizza and the fact that we would be happy eating it multiple times a week, so naturally my mind when straight to pizza when Foodie mentioned pie!

Much as I love a classic sausage pizza (sausage > pepperoni in my book), I typically aim for the more creative topping combinations. Pizza is easily a meatless meal, and to prove it I put together a collection of 14 meatless pizza "pies", including some from around the web and some of my Sweets Life favorites, like this one featuring pea pesto and fresh herbs and grilled sweet potato and kale pizza!

Chicken Tikka Pizzas


I find it humorous that I have yet to try my hand at chicken tikka masala, and yet here I am making chicken tikka pizzas. I must say, if these pita pizzas are any indication of the real thing, I had better get making it sooner than later!

We loved these personal-sized pizzas, fashioned on pita bread and topped with the chicken tomato mixture. If garam masala hasn’t found its way into your spice drawer, this would be a good reason to introduce it (plus once you buy it, you can use it for Bombay Sloppy Joes and Chickpea Curry, two of my favorites!).

A meal is particularly good when it isn’t super complicated. This one came together on a busy Monday night after we’d spent time in traffic and then picking up groceries. I was on the verge of hangry (hungry + angry), but these were fast enough that we were sitting down to dinner before I reached my breaking point! Please tell me I’m not the only one who experiences severe hanger!

Spinach Bacon Cheese Calzones

 If you're anything like me, you never, ever get sick of pizza. If you are under the unfortunate circumstance of having a child or a spouse or a roommate who isn't quite as pizza obsessed, maybe you can sneakily get away with yet another night of pizza for dinner by making them calzones instead!
These have all the right elements of pizza, just a little mixed up. While you can stuff them with any of your favorite pizza toppings, I kept things simple--spinach and bacon in a ricotta/mozzarella mixture. Sauce was served on the side for dipping, which is perfect if you know someone who hates tomato sauce (ahem. my sister Renatta!).
Make them. Freeze them. And pull them out when that pizza craving strikes!
And if you haven't already, you've gotta try grilling them!!

Bacon Apple Butter Flatbreads with Caramelized Onions and Gouda

When Musselman's sent me some of their apple butter in preparation for grilling season, my first instinct was to use it in a marinade or some BBQ sauce. I even went so far as to select a sauce from Musselman's extensive list of recipes, when I decided to change gears a bit and use it on my favorite grilled flatbreads.
Much like the white bean flatbreads with prosciutto, we started off by grilling the flatbreads until they were just beginning to char. I then spread a thin layer of apple butter on them. Bacon pairs well with, well, everything, so a sprinkle of that was next, followed by some chopped pecans and smoked gouda. At this point I stuck the flatbreads in the oven where I broiled them until the cheese began to melt. The finishing touches were onions that had been caramelized in balsamic vinegar and chopped spinach. 
I love my friends and family in that they are always willing to sample whatever crazy combination I put in front of them. This one was no different! My hesitancy turned to relief when they immediately started raving about the flatbreads (which I cut into squares with a pizza cutter). These definitely have a lot going on, but each of the ingredients works so well together. If you don't have gouda, I think blue cheese would have also complemented the flatbreads well.
Lucky for me, I still have the majority of my jar of apple butter left, so I can still try a BBQ sauce recipe  or a number of Musselman's other ideas...they have some fantastic sounding desserts that feature apple butter! White Bean Flatbreads with Prosciutto and Cheese

These may not look like much on my dingy baking pan, but darkness was falling and we were hungry, so snapping a few quick pictures before running inside to eat was all I had the chance to do. You're going to have to trust me on this one, because Food and Wine nailed it with this combination of ingredients!
I used gouda (the original recipe called for fontina), but took the rest of the toppings straight from Food & Wine--chopped almonds, prosciutto, and white beans mashed with roasted red pepper flakes and rosemary. You would think your tastebuds would be overwhelmed by the contrast of sweet, spicy, and salty, on top of the varying textures, but together it's one big home run!
Instead of using pita bread like the magazine suggested, we made our favorite flatbreads on the grill and used those as the base, which I loved. I think pita bread would have been a little softer; our flatbreads were crunchy from being grilled and then broiled, which made it like a very thin, cracker-crust pizza. These are fun little personal sized "pizzas", but you could also make them on mini pita breads or cut into smaller pieces and serve as an appetizer.

Butternut Squash, Spinach, and Red Onion Pizza with Goat Cheese

 In the very early days of the blog, I decided to make a butternut squash pizza. I sent Ryan to the store to pick up a butternut squash and when we got ready to make our pizza, I discovered he had bought a spaghetti squash. My sister Julia was visiting--this was before she'd moved to St. Louis--and that evening will forever go down in history as one of my worst moments. Not only did I freak out on Ryan for purchasing the wrong squash, but when my sister started making fun of my ridiculousness, it led to one of our most epic fights. Three years later and I still get a little hostile when Julia or Ryan begins a sentence with, "Remember that time Ryan bought a spaghetti squash...".
For the record, spaghetti squash tastes pretty weird on pizza. (Yes, we made do with the spaghetti squash) Butternut squash, on the other hand, is quite tasty!...especially when paired with caramelized onions, goat cheese, and spinach! This is really more of a flatbread than a pizza. There's no sauce, although I recommend spreading some olive oil on the crust before you add the toppings. While we normally use homemade dough, I had some Pillsbury artisan dough leftover from the Snackadium and we were pleasantly surprised with how good it was! To make this a super quick meal, pre-roast your squash and caramelize your onions. Refrigerate overnight and then throw everything on the crust and bake!

2012 Eat and Repeat: Bacon, Steak, and Blue Cheese Pizza

Ryan and I have very different opinions when it comes to boots. It's not that Ryan doesn't like boots. He's actually quite fashionable and compliments me each time I bring home a new pair (which is, admittedly, a few times each 'season'). The problem is the scuffs that the boots leave on our floors. I'm constantly chided for leaving my boots on in the house, and the man clearly doesn't understand my need to keep my calves warm!

One thing we can agree on is pizza. We love all kinds, but both prefer a thinner crust with lots of toppings, just like we enjoyed at PW Pizza as part of our 2012: Eat and Repeat challenge. Our absolute favorite was the The Blues, which included bacon, steak, blue cheese, and red onion on a honey wheat crust topped with chimichurri sauce. When I set out to recreate it, I stumbled upon the recipe for PW's chimichurri sauce on STL Today's site which made the recreation much easier!
Ryan and I tag-teamed this pizza (I didn't wear my boots). I made the sauce in the food processor while he cooked the onions and the steak. This pizza could be made much more quickly if you made the various components (sauce, steak, sautéed onions) a day ahead of time...so plan ahead if you're in a hurry! Although we used sourdough pizza crust instead of honey wheat, our pizza tasted pretty darn similar to the original. This goes right up there with this pizza as one of the best (and most creative) pizzas we've made at home!

Caramelized Onion, Blue Cheese, and Bacon Pizza with Fig Jam

We're a little bit obsessed with this pizza. And really, can you blame us? The sweet fig jam, the pungent blue cheese, and the smoky bacon play off of one another perfectly. The caramelized onions are the cherry on top! This is a combination we frequently use on pizza, but I finally got around to blogging it. On my birthday a few weeks ago, this was actually my meal of choice.

I love pizza—enough to eat it multiple times a week or multiple days in a row—and I’m not at all tied down to the conventional idea of pizza. I’ll try weird flavor combinations (like pea pesto!), enjoy it in muffins, or spend an hour making pizza monkey bread. When I came across a recipe for these rolls in a recent Better Homes & Gardens issue, I knew this was the newest unconventional way for me to give pizza a go!

My mom has been making plenty of trips to St. Louis this summer….not necessarily because she’d like to see her three children currently living there (although I’m sure this doesn’t hurt!), but because she’s wedding planner extraordinaire! Julia’s wedding is only a few short weeks away and she and my sister have been furiously putting their touch on what’s sure to be the wedding of the season!

Grilled Pizza with Cheesy Corn, Fresh Tomatoes, and Basil

This untraditional pizza is rather similar to the white pesto pizza with tomatoes and basil I recently made. However, instead of pesto, this pizza features a sauce made of corn pureed with parmesan cheese, salt, and garlic. I found the recipe in the August issue of Martha Stewart Living magazine and was once again inspired to throw some pizza on the grill. We used to grill pizza all the time and somehow felt out of the habit, instead opting to use the oven. This pizza reminded me just how easy it is to use the grill and I have a feeling our weekly pizzas won't return to the oven until winter arrives!

What happens when you send three boys (husband Ryan, brother Quinn, and [almost] brother-in-law Nate) to the grocery store to pick up chicken sausage, green onions, and tomato sauce? They come home with chicken sausage, a green pepper, and tomato paste. One for three, at least, right? My sister Julia and I could only laugh when we unpacked the contents of the Trader Joe's bag.
