I’m sure many of you, like me, have a handful of grocery
staples. You buy whatever you need for your meal plan or maybe grab a few impulse
purchases each week, but more often than not you have your basics that are
always in your cart. For us this includes Greek yogurt, kale, bananas, and
zucchini. Okay, and chocolate chips.
I like always having zucchini on hand because it’s easy to
slice and eat with hummus, we absolutely love zucchini bread (with chocolate chips of course), and it’s a versatile vegetable
that can be added to just about any meal. Take this pasta, for instance. Pasta
often gets a bad reputation, especially in today’s age of “fear the carb” and
“avoid gluten like the plague”, but this dish is fairly healthy and not oozing
with cream or cheese. It only takes a few basic ingredients that you likely
have on hand (especially if zucchini is one of your staples!) and you aren’t going
to have to slave away in the kitchen for hours to get dinner on the table!

We were fortunate to have my mom in town for the first few
days when I went back to work in May. It was a treat for all of us—Brecken got
spoiled with grandma love and affection (and a few new outfits!) and I got
spoiled with a calming presence for those first harried days and much needed
help around the house! There’s nothing better than having an extra set of hands
available to hold a baby, wash a few dishes, or tag-team the making of this
lasagna!
My mom and I prepped this the night before we ate it, taking
turns slicing eggplant or sautéing mushrooms or assembling the layers
(confession: she did most of it!). The next night we threw together a salad,
sliced some Asiago cheese bread, and threw this in the oven. I’m as big a fan
of meaty, cheesy lasagna as the next, but I liked this meatless,
vegetable-heavy take on the traditional dish. My only change would be to use
more sauce, which I’ve reflected in the recipe below. Even if you don’t have
extra help prepping this, you’ll find it comes together pretty quickly and
since leftovers reheat well, you’re best off doubling and enjoying for a few
days!

This makes a great picnic or party dish because most of it can be done ahead of time. I cooked and marinated the pasta, storing it in one bowl, and prepared the remaining ingredients and stored them in a separate bowl. Just before serving, I combined the two with a bit more of the dressing and was ready to go! You could just as easily throw it all together at once and let it sit for a bit if you don't want to dirty multiple dishes, but I wanted to keep the ingredients as fresh as possible.
Judging by how many people came up to me during the party to rave about this pasta salad, it's safe to say you'll witness similar feedback!

One month ago today Brecken was baptized at our church. It
was an incredibly special day, and we celebrated the event with a luncheon at
our house after the service. The menu included a variety of our favorite
dishes, including Ryan’s smokedpork, his dad’s famous brisket, this salad, and several other things, but the
highlight of the day for many was this pasta salad.
Some people, like my sister-in-law Erin, went so far as to
say that it was the best pasta salad she’d ever had in her life! Considering
how many pasta salads she’s likely tasted at church potlucks and picnics in the
park, I believe this to be quite the
compliment. If you like broccoli salad, you’ll love this, which is very similar but with the addition of
farfalle pasta. Like most pasta salads, this is easily made ahead of time…just
be sure to wait and add the bacon and pecans just before serving to ensure
maximum crunch!

This is a fall dish at its finest! I think I interrupted our
conversations over dinner at least three times to ask Ryan, “isn’t this SO
good?!”. He agreed, although maybe not with quite the same vigorous enthusiasm
as I had…but only because our displays of emotion typically fall on opposite
ends of the spectrum!
In terms of a pasta dish, this isn’t all that heavy. Rather
than a cream based sauce, the pasta is simply tossed with a little bit of the
cooking water and some parmesan cheese. The brussels sprouts, caramelized
onions, dried cranberries, and bacon (a definite must if you’re a bacon fan!!)
add plenty of flavor. It was one of those dishes that, while packing up the
leftovers, I kept finding myself sneaking bites.
And while we’re on the topic of pasta, do yourself a favor
and make this creamy mushroom fettuccine florentine.

Linguine with Summer Vegetables and Goat Cheese
Many of my Monday nights this summer have been spent with two of my best friends, three in a row on the couch watching the Bachelorette, plates of dinner on our laps. I’m the first to admit to the ridiculousness of the show, but I value the quality time with the girls, which was often more about our conversations than what was happening with Desiree and the men vying for her attention.

This summer pasta dish was one of the meals eaten while
tuned into ABC, and is far more memorable than what's-his-face or that other
guy. Warm linguine is tossed with charred corn, zucchini ribbons, and sliced
tomatoes. It almost sounds too simple to be good….that is, until its mixed with
walnuts, basil, and goat cheese which manages to melt into the pasta and coat
each strand of linguine.
Trust me when I say you must make this pasta dish, found on
the August cover of Real Simple magazine. A side of trashy TV is totally
optional!

Gnocchi with Zucchini Ribbons and Parsley Brown Butter

A few weeks ago, Julia and I were sitting in the Orlando Airport, waiting for our flight back to St. Louis. I pulled out a piece of scrap paper and started meal-planning for the week. I glanced next to me to find my sister was doing the same thing! I immediately started quizzing her, desperately trying to glean inspiration from her. I'd gone more than a week without cooking, thanks to my trip to San Diego right before Orlando, and was need of a little boost to get me back into the mindset of eating something other than restaurant food.

Tortellini with Lemon, Artichokes, and Brussels Sprouts

It's Friday and I'm coming to the end of a four day week, thanks to my trip to Orlando last weekend. Am I the only one who feels like the shorter weeks sometimes have a tendency to drag on extra-long? Point is, I'm tired and counting down the minutes to the weekend!
Chances are, you're tired too. Weekdays have a way of wearying the best of us and I know I'm not the only one who anxiously awaits the chance to recharge on the weekends. Lucky for you, this meal won't take you any longer than it would to order and pick up pizza, but you don't have to change out of your sweats (please tell me I'm not the only one who comes home on Friday nights eager for sweats, a glass of wine, and time on the couch!).
This is comfort food--as all cheese tortellini is--but with enough green to balance things out (I'd double the brussels next time!) and the brightness from lemon to keep things interesting. Chill out, relax, and kick off the weekend with an easy meal!Tuesday, April 30, 2013
Chicken Orzo Salad with Goat Cheese

Most of the time when I eat pasta, it's more about the other ingredients (and the sauce!) than the pasta, which is why large pieces of noodle can irritate me. Give me more of the other stuff! (The exception being this pasta dish with fresh pappardelle--YUM!) Perhaps that's why I like orzo so much. It's teeny tiny pasta, so you get your carby goodness but it doesn't overtake the rest of the dish.
I made this when I had a few girlfriends over for dinner and it was the perfect spring meal, which we enjoyed with Alexia rolls and finished up with our favorite Ted Drewes for dessert! You could easily remove the chicken and serve it as a side dish. It'd be a great accompaniment to a summer picnic or chicken fresh off the grill.
