Pear and Blue Cheese Spinach Salad

One of the best gifts I received last fall from my wedding showers was a personalized "recipe album" that my mom put together. The binder included several of my favorite recipes that she'd made me growing up, as well as some of the recipes that she's known for and is constantly asked to share. Whenever I'm looking for a surefire winner, I always consult this album.

This salad is one of those winners. Simply titled "Pear Salad" in the book, I have no idea where it came from. However, the ingredients are simple and the flavor is to die for! It's the perfect side to a meal. Last time, we ate it alongside our grilled pizza. This time, with a chicken pasta dish.

Ingredients:
-Mixed Greens (tonight I only had spinach, so that's what I used)
-small package of pecans, toasted (3-5 min at 350 degrees or 1 1/2 min on a plate in the microwave)
-4 oz crumbled blue cheese
-2-3 red pears, sliced

Dressing:
-1/4 cup sugar
-1/2 cup vegetable oil
-3 Tablespoons cider vinegar
-1/2 tsp celery seed
-salt

Directions:
Put salad ingredients in a bowl and toss. Make dressing and pour onto salad. Pretty easy :)

**This time I made it I halved the dressing amount because I was making a smaller salad and we'd had a lot of leftover dressing. I later realized that I halved everything but the celery seed. Oops! It still turned out fine!
