Quick 'n Easy Tuna Salad

The other night Ryan and I had a minimal amount of time to prepare dinner. We were expecting a group of people over to our house and needed to eat and clean up before they arrived. Tuna salad sandwiches are one of our stand-bys for nights like these. I usually modify the recipe, based on what I have on hand. The ingredients (and their approximate amounts) I used this time are listed below.

Tuna Salad-serves 2
Ingredients:
1 can of tuna (could definitely use 2 for bigger appetites or if you want leftovers!)
1/2 cup red grapes, chopped into quarters
1 stalk of celery, finely chopped
1/4 cup red onion, chopped
1-2 tablespoons plain yogurt
Sprinkles of the following:
-dried mustard
-seasoned salt
-celery seed
-pepper (lots of it!)
2 wraps (we used multi-grain sandwich wraps)
Fresh spinach leaves

Mix all ingredients in a bowl until well-combined. Spoon tuna salad onto wraps and top with spinach. Roll up and chow down!

**Like I said, this recipe can easily be modified according to your tastes or what you have available. I often sub mayo for the yogurt. I've included dried cranberries instead of grapes, added chopped nuts, or included chopped carrots.
