Skillet, a hipster diner in Capital Hill where I plopped down in the pea green seats at the counter and dug into a kale caesar salad and a veggie burger made from farro, stuffed with mushrooms, and topped with pickled shallots. I think I've found myself a new Seattle haunt, especially since there were several more things on the menu that I'm itching to try. Can't wait until another business trip takes me west again!
