Pomegranate Salad with Honey-Cider Vinaigrette


I've had this recipe bookmarked for awhile and finally made it to accompany our pizza dinner while at home. The dressing was very unique, with a strong cinnamon flavor, but I really liked it. Plus, you really can't go wrong with pomegranate seeds or feta! We added some apple slices to the salad, leftover from our goat cheese pizza, and they made a great addition. I recommend this salad if you're looking for a variation from the typical strawberry pecan spinach salad, another one of my favorites.

Pomegranate Salad with Honey-Cider Vinaigrette
recipe from Gimme Some Oven

Ingredients:
-6-7 cups spinach
-1/3 cup pomegranate seeds
-1/2 cup toasted pecans
-crumbled feta cheese
-sliced green apple

Dressing Ingredients:
-6 tbsp olive oil
-2 tbsp apple cider vinegar
-1 1/2 tsp honey
-2 pinches salt
-freshly ground black pepper
**we actually doubled the dressing recipe and had some left over, I'm not sure if one batch would have been enough though

Directions:
1. Whisk together vinaigrette ingredients. If preparing ahead of time, store in refrigreator.
2. Combine spinach, pomegranate seeds, feta, pecans, and apple slices. Toss with dressing and serve.
