Skillet Home Fries


 The only time I have home fries are when we go out for breakfast and they're served as the mandatory side to my omelet or eggs or whatever dish I order. If given the choice, I'd likely choose the toast or an english muffin or the fruit cup over the home fries.

When faced with some extra potatoes and breakfast for dinner on our weekly menu, I decided to try my hand at home fries...and I just may have changed my feelings about the popular side dish with this rendition of them. Although they didn't get quite as crispy as I might have preferred, I think that was the result of my own impatience to eat dinner and not a fault of the recipe.
I often think of home fries as a flavorless grease bomb, but thanks to the onion, red pepper, and paprika in these, they were anything but! Served alongside scrambled eggs and collard greens with bacon, I found myself mentally noting to pick up potatoes for our next breakfast for dinner meal!

Skillet Home Fries

Ingredients:
-3 tbsp vegetable oil
-1 large onion, finely sliced
-1 large red pepper, finely diced
-2 cloves garlic, coarsely chopped
-1 tbsp paprika
-salt & freshly ground pepper
-4 red potatoes, cut into 1/2-inch cubes

Directions:
1. Heat oil in a large skillet over medium heat. Add onion, sautéing until soft. Add the red pepper and garlic and cook for 1 minute. Stir in the paprika and cook for 1 minute.
2. Add the potatoes and season with salt and pepper to taste. Cover and cook until almost cooked through. Remove cover and continue cooking for 5-10 minutes until golden brown.
