 I have to say, I am so at peace with my decision to cut back on blogging seven days a week to four days a week. The funny thing is, my backlog of recipes is overwhelming because at this point I definitely haven't cut back on cooking or baking. However, not having to worry about doing the behind the scenes work for seven posts a week has been huge.

Don't get me wrong, I love doing it...but I'm also loving the extra "free" time, which is hardly free because I've found infinite ways to fill it! Still, it's nice to sit down and read a book after work or make spur of the moment plans and not worry about how I'm keeping up with blog posts. We have to take advantage of this before the baby comes!

It also means that sometimes I make recipes and don't worry about photographing them. Sometimes it's just nice to eat food while it's hot without grabbing the camera or a placemat or any other props. Of course, the problem arises when I really love a particular recipe and want to share it with you. Then again, it's not really a problem...it just means I get to make and eat that particular dish again!

Such was the case with these Sriracha-Glazed Chicken Wings, which we were not at all disappointed about eating a second time. They couldn't be easier to make--throw a few ingredients together, add the wings, marinate, and bake! The second time I made these my chicken was kind of wet which is why the wings look a little bloated and light-colored. What they lack in appearance they make up for in flavor. Sriracha lovers must make these! They can be as mild or as spicy as you'd like, depending on how much Sriracha you add. Perfect game day food!

Sriracha-Glazed Chicken Wings

Ingredients:
-1/4 cup soy sauce
-2 tbsp plus 1 tsp white vinegar
-1-2 tbsp Sriracha sauce
-1 tbsp sugar
-1 1/2 tsp freshly peeled and grated ginger
-1 1/2 tsp toasted sesame oil
-1 1/2 lbs chicken wings, cut in half at joint (wing tips removed) or drumsticks

Directions:
1. Whisk together soy sauce, vinegar, Sriracha, sugar, ginger, and sesame oil in a glass baking dish.
2. Add chicken wings and toss to coat. Marinate for at least 30 minutes, tossing halfway through.
3. Preheat oven to 375F. Bake until chicken is cooked through and sauce thickens (about 30 minutes), flipping chicken halfway through.
