Beet and Mango Salad with Goat Cheese

Whenever I hear the word "beets", I can't help but think of The Office... "Beets, Bears, and Battlestar Galectica"(check out the clip on YouTube here. Classic!). This salad isn't about bears though, this is all about the "Beets, Mangos, and Goat Cheese". This is an easy salad to throw together, just combine the ingredients and toss with the dressing while your main dish is in the oven or on the grill. I used pre-cooked beets from Melissa's Produce, but check out the original recipe if you want to roast your own.
Mangos and beets might seem like an unlikely pairing, but the sweetness from the mango is a good contrast to the flavor of the beets, which I struggle to describe. How does one describe the taste of beets?! The goat cheese is, of course, the perfect thing to tie it all together! (And in case you can't get over the beets, try this similar salad that omits beets and adds cashews!)

Beet and Mango Salad with Goat Cheese
adapted from Cooking Light

Ingredients:
for the vinaigrette-
-1/8 cup orange juice
-juice from 1/2 of one lime
-1 tbsp honey mustard
-1/8 cup olive oil
-salt & pepper, to taste

for the salad-
-1 cup beets, cooked and sliced (I used these from Melissa's produce which were peeled and steamed)
-2 mangos, peeled and cut into chunks
-2-3 oz. goat cheese, crumbled
-10-12 cups mixed greens

Directions:
1. In a small bowl, whisk together orange juice, lime juice, mustard, and olive oil. Season with salt and pepper.
2. Add salad greens to a large bowl. Top with beets, mangos, and goat cheese. Toss with vinaigrette and serve immediately.
