Oreo Peanut Butter Cookie Dough Truffles


I had you at the title of this one didn't I? Who can resist anything with those words in the title? Not I, that's for sure! This reminds me of when I used to go to Coldstone Creamery in high school and order cake batter ice cream with brownies and cookie dough chunks. I was proud of myself for creating the ultimate dessert: ice cream, cake, brownies, AND cookies all in one dessert. Similarly, this could be considered pretty ultimate--oreos, peanut butter, cookie dough, and truffles?


It's no surprise that these are a crowd pleaser. Make a batch of these for your next party or get-together and watch them disappear before you get a chance to nab one! In fact, you might want to double the batch...the recipe below gets you about 35 truffles. These can be made several days ahead of time, another reason they're great for a party. I made them on a Sunday and they were still perfectly good over five days later. Normally, they'd never last that long, but I decided to be nice and share! :)





Oreo Peanut Butter Cookie Dough Truffles
recipe adapted from Cake, Batter, and Bowl


Ingredients:
-1/4 cup butter, softened
-1/2 cup packed light brown sugar
-2 tbsp half and half (can sub milk)
-1/2 cup creamy peanut butter
-1/2 cup all-purpose flour
-1/2 tsp salt
-14 Oreo cookies

Directions:
1. In a large mixing bowl, cream butter and sugar. Mix in half and half and peanut butter.
2. Gradually beat in flour and salt.
3. In a food processor, coarsely chop 10 Oreos. Mix into cookie dough. Pulse remaining 4 Oreos in food processor and place in a small bowl.
4. Roll dough into one-inch balls. Roll balls in Oreo crumbs to coat completely. Chill until serving.
