Goat Cheese Endive Appetizer


My grandma served endive leaves spread with gorgonzola cheese as an appetizer on Christmas and I loved them. Ryan and I thought they'd be the perfect appetizer to bring to our New Year's Eve party, but we decided to switch things up a bit and went with goat cheese, because we're on a huge goat cheese kick. When buying the goat cheese, we were struck by all of the variations and decided to kick it up with some cinnamon cranberry goat cheese. Further brainstorming led to the addition of chopped apples, chopped pecans, and a drizzle of balsamic vinegar. When all was said and done, these turned out to be an awesome appetizer. It was easy to put together before we headed out the door, it looked fun on our green leaf platter, and the tastes went together perfectly! I had to be careful not to stuff my face with these, as I was trying to save room for a delicious dinner and some of my raspberry trifle :)

Goat Cheese Endive Appetizer

Ingredients:
-2 heads endive leaves
-4 oz. cinnamon cranberry goat cheese
-chopped pecans
-peeled and finely chopped green apple
-balsamic vinegar

Directions:
1. Separate endive leaves from the head.
2. Spread a bit of goat cheese on each leaf.
3. Top with a few pecans and apple pieces.
4. Drizzle a bit of balsamic atop the leaf.

That's it! So easy!!
