Green Bean and Prosciutto Salad Bundles

These green bean and prosciutto salad bundles are so fancy looking! You know when you find gorgeous pictures of food on Pinterest and no matter how hard you try, it just doesn’t look the same in your own kitchen? This isn’t one of those. These really are very easy to assemble and are sure to impress the folks at your next dinner party or gathering with friends. 

Or, you can be like Ryan and I, and eat them sitting on the couch on a Monday night. Who says you can’t eat fancy food in your sweats over an episode of Breaking Bad?! The salty prosciutto, the crunch of the green beans, the tang of the balsamic…everything about these had me wishing for more after we’d devoured the plate. Break out the linen napkins, or just the paper plates. Whatever you decide, give these a try sometime soon!

Green Bean and Prosciutto Salad Bundles
slightly adapted from The Hot Plate

Ingredients:
-2 tbsp extra-virgin olive oil
-4 tbsp balsamic vinegar
-1 1/2 tsp lemon zest
-1 tbsp finely chopped chives
-8 slices prosciutto
-24 green beans, blanched
-2 cups spinach
-1/4 cup shaved Parmesan cheese
-salt & pepper

Directions:
1. Blanche green beans in boiling water for 4 minutes, then submerge in ice water (or rinse with cold water) to stop their cooking.
2. Lay prosciutto flat. Add three green beans near one end of each piece of prosciutto. Top with shaved parmesan and a few pieces of spinach. Roll the prosciutto up over the filling, holding it in place.
3. In a small bowl, combine the olive oil, balsamic vinegar, lemon zest, and chives. Season with salt and pepper and mix to combine. Drizzle the dressing over the bundles just before serving.
