S'Mores Bars

Some of my best memories are from summer evenings around a campfire. The location varies--Camp Luther, my parent's backyard, campgrounds in Missouri--but the dessert doesn't. Natalie + Campfire = S'mores. This isn't really an option. In other words, if you want me to come to your campfire (please?), make sure you have a supply of marshmallows, grahams, and chocolate near-by. Or just provide the sticks and I'll bring the goods, I don't mind :)


Unfortunately, a campfire isn't always readily available when I need a s'mores fix. That's where these bars come in. They've got the sandwich, the flavor, and the goo, all without the need of a crackling fire. Good thing...because I'm not ready to explain to the neighborhood police why we've got smoke coming from the backyard...

S'Mores Bars

Ingredients:
-1 stick butter, softened
-3/4 cup sugar
-1 egg
-1 tsp vanilla extract
-1 1/3 cups all-purpose flour
-3/4 cup graham cracker crumbs (I had leftover from these delightful cookies)
-1 tsp baking powder
-1/4 tsp salt
-1/2 bag chocolate chips
-3 cups mini marshmallows

Directions:
1. Preheat oven to 350F. Grease a 8-in baking pan.
2. Beat butter and sugar in a large bowl. Beat in egg and vanilla.
3. In a separate bowl, stir together flour, graham cracker crumbs, baking powder, and salt. Mix in with butter mixture, beating until well-blended.
4. Press half of the dough into the baking pan, lining the bottom. Bake for 15 minutes. Remove and sprinkle chocolate chips over the crust. Top with mini marshmallows. Scatter remaining dough atop marshmallows (I had to kind of flatten the dough with my hands and lay it on top. Don't worry if you can't completely and fully cover the top). Bake for 10-15 additional minutes, until lightly browned. Cool completely before slicing.
