Chewy Chocolate Peanut Butter Butterscotch Cookies

The month of June, our house was operating more like a hotel than a home. Ryan counted and we think we had eight or nine different adults sleeping at our house over the course of seven days! It was a crazy few weeks, but we honestly love having company. We purposely bought a house with enough bedrooms to host our family and friends as much as possible, and the house feels so much more fun when it's full of our favorite people!
Unfortunately the weekend our friends Paige and Zach came to stay, we were headed to Chicago, so it really was more like a hotel than a bed and breakfast! We missed the chance to hang out with them (and expect them to come back sooner than later when we're in town...did you hear that you guys?!), but were excited to find they picked up some of our favorite treats as a thank you. The gesture was totally unnecessary, but I wasn't at all disappointed to find a jar of Peanut Butter & Co's Dark Chocolate Dreams awaiting me.
Remembering what a hit the chewy peanut butter butterscotch cookies were, I decided to use some of the dark chocolate peanut butter in a spin on those cookies. I used chocolate peanut butter in place of regular, and added chocolate chips in addition to the butterscotch chips. The end result was much like the original cookies, soft and chewy and utterly addicting, with the bonus of some added chocolate! If you can't find dark chocolate peanut butter (although Target often sells it), you can easily make the original cookies but still add in some chocolate chips along with the butterscotch chips. Whatever spin you decide to take, you can't go wrong with chewy cookies!

Chewy Chocolate Peanut Butter Butterscotch Cookies
adapted from the Chewy Peanut Butter Butterscotch Cookies
Ingredients:
-1 stick butter, softened
-1/2 cup brown sugar
-1/2 cup granulated sugar
-1 1/4 cups creamy chocolate peanut butter
-1 cup butterscotch chips, melted (measure 1 cup of chips, then melt)
-1 egg
-1 tsp vanilla extract
-1 1/4 cups all-purpose flour
-1/2 tsp baking soda
-1/4 tsp kosher salt
-1/2 cup butterscotch chips
-1/2 cup chocolate chips

Directions:
1. Preheat oven to 350F. In a mixing bowl, cream butter with sugars. Add chocolate peanut butter and melted chocolate chips, beating until combined. Add egg and vanilla, beating until combined.
2. In a separate bowl, combine flour, baking soda, and salt. Add dry ingredients to the wet ingredients, mixing just until combined. Stir in butterscotch and chocolate chips.
3. Using a spoon or your hand, roll one-inch balls of dough. Roll in granulated sugar before placing on baking sheets lined with parchment paper (leave about 2 inches between each). Bake for 9-11 minutes, until cooked through. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
