Costco Salmon & Grilled Vegetables


Ryan gets all of the credit for this meal. I was originally supposed to assist by chopping the vegetables when I got home...but I proceeded to lock myself out of the house and instead had to wait for him. Go me!

Anyways, this doesn't even deserve a post as it isn't much of a recipe, but the artistic director of this blog (ahem, Ryan) took a pretty picture of it so here it is!

The wild alaskan salmon was from Costco and was already pre-marinated so all he had to do was grill that. I highly recommend...the flavor was perfect!

As for the vegetables, Ryan chopped half of a yellow squash, half of an orange pepper, and half of a zucchini. He then tossed it with the following:

-olive oil 
-salt & pepper
-finely chopped cilantro
-finely chopped fresh garlic

He used his brand new grill basket (bday gift from yours truly!) to grill those babies for about 15 minutes. Perfection.

Fish and veggies, awesome summer meal (to be followed up with some leftover scotcheroos ;))

That title makes me think of dunkaroos…remember those? Those used to be a special treat in our house growing up!

Anyways, this is a really basic recipe that's posted all over the place, but I copied one off of allrecipes.com, but used fewer rice krispies than it called for. These are some of the yummiest bars, especially because I'm really on a butterscotch kick lately. I love regular rice krispy treats, but the addition of peanut butter and the chocolate/butterscotch frosting take them to a whole new level! Easy and simple, they only take about 15 minutes to make. I brought most of them to a work picnic today where people went crazy over them. Of course, we still have some at home because Ryan wasn't letting them all leave the house!

Ingredients:
1 cup light corn syrup
1 cup sugar
1 heaping cup peanut butter (I used chunky)
5 cups rice krispies (the recipe usually calls for at least 6, but I never feel like my bars are chewy enough!)
1 cup semi-sweet chocolate chips
1 cup butterscotch chips

Directions:
Heat corn syrup and sugar over medium heat in a large pan. The sugar begins to dissolve and as soon as the mixture starts to boil, remove from heat. (Here's where I used to go wrong in making these…I'd let it boil awhile and the treats end up being ROCK HARD! So make sure you don't over-boil!) Stir in the peanut butter until it's all well-combined and the peanut butter is melted in. Pour the rice krispies into the pan and mix well using a large spoon (might want to spray the spoon with cooking spray to avoid some of the mess of rice krispies sticking all over the place!). Press the rice krispy mixture into a greased 9 x 13 pan and spread/press with a greased spatula.
For the frosting, heat the chocolate and butterscotch chips in a small pan until melted. Spread onto the rice krispy treats.

**I then refrigerated for about an hour to let the frosting harden, then I cut them and let them rest in the pan overnight until I took them to the picnic.

Not at all healthy, but so so good :)
