Shredded Beef Sandwiches

When I volunteered to bring the main dish to a birthday lunch last weekend, these sandwiches were the first thing that came to mind. Growing up, this was another one of my mom's staple "party foods" as well as one of our favorite family dinners. I still remember coming home from school some days, smelling the beef cooking in the crockpot and running over to remove the lid and get a stronger whiff before counting down the minutes until dinner time. Surprisingly, I haven't made these since I've left the house. Now that I've remembered just how good these are, I'll be making them again soon!

With literally no preparation or hands on time, these are perfect for a party, a busy weeknight, or as in our case, a birthday/football watching gathering! I actually made the meat the night before and just reheated in my crockpot before serving. These were great on homemade sandwich buns, but they're also good on dollar rolls if you want to make them appetizer sized.

Shredded Beef Sandwiches

Ingredients:
-2 1/2-3 lbs chuck roast
-1 package dried onion soup mix
-1/3 cup packed brown sugar
-1/2-3/4 cup ketchup

Directions:
1. Place meat in crockpot. Top with onion soup mix, brown sugar, and ketchup.
2. Cook, on low, for 6-7 hours or until meat can be easily shredded.
3. With 2 forks, shred meat. Fill sandwich buns with shredded beef.
