Blues struck a chord, no pun intended, with all of us and "Bacon, Bourbon, and Blues" was born. We decided Mike's graduation with an MBA was a good reason to celebrate and I began bookmarking every bacon or bourbon recipe I happened across. However, as soon as we determined our party theme, this delightful little appetizer was added to the list. Ryan and I first had blue cheese-stuffed bacon-wrapped dates at a Christmas party last December and we hadn't stopped talking about them since.
These were one of the favorite uses of bacon at "Bacon, Bourbon, and Blues". I convinced Maggie to try one despite her distaste for both bleu cheese cheese and dates and wasn't at all surprised when she admitted to liking them. Watch this disappear at your next party!
One Year Ago: Marbled Banana Bundt Cake
Blue Cheese Stuffed Bacon Wrapped Dates

Ingredients:
-1/2 pound sliced bacon, each piece cut in half
-15 dates
-2 oz. blue cheese
Directions:
1. Preheat oven to 375F.
2. Cut a slit in each date and carefully remove pit. Stuff pieces of cheese into the slit and wrap a half-slice of bacon around the outside. Secure with a toothpick. Repeat with remaining dates.
3. Place dates on a rimmed baking sheet lined with foil. Bake for 30-40 minutes, until bacon is crisp.
