Winter Fruit Salad


Yesterday, I promised you desserts and then I return today with a salad. What's up with that?! Sorry, but this one was too good not to share immediately! I'll be back tomorrow with something else for your Christmas cookie trays!

My mom, the Salad Queen, prepared this salad for a family Christmas party we went to last weekend and it was my favorite part of the meal. I don't have much more to tell you except that it was just a really good green salad. I like when salads are full of a variety of elements-sweet, savory, crunchy, chewy...and this salad has it all! Put it on the menu for your next dinner party!

This salad would be also be a great accompaniment to my post from one year ago: Chicken Sandwiches with Spinach, Mushrooms, and Cheese!

Winter Fruit Salad
from Bearpath's Cookbook for the Cure


Ingredients:
for the dressing-
-1/2 cup sugar
-1/3 cup lemon juice
-2 tsp finely chopped onion
-1 tsp Dijon mustard
-1/2 tsp salt
-2/3 cup oil
-1 tbsp poppy seeds

for the salad-
-1 large head romaine lettuce
-1 cup shredded Swiss cheese
-1 cup cashews
-1/4 cup sweetened dried cranberries
-1 apple, cubed
-1 pear, cubed

Directions:
1. To prepare the dressing, combine the sugar, lemon juice, onion, mustard, and salt in a blender or food processor until blended. Add oil in a steady stream and blend until thick and smooth. Add poppy seeds and process a few more seconds.
2. In a large serving bowl, combine lettuce, cheese, cashews, cranberries, apple, and pear. Toss with dressing just before serving.
